  • 1/2 cup butter
  • 1 cup packed brown sugar
  • 2 cups frozen Peach Slices, thawed
  • 1/2 cup almond slices
  • 1/3 cup peach juice, from concentrate
  • 3 eggs, separated
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder


  1. Melt butter in a 9- or 10-in. ovenproof skillet. Add brown sugar; mix well until sugar is melted. Arrange peach slices in a single layer over sugar. Sprinkle almonds over peaches; set aside.
  2. In a large bowl, combine egg yolks and sugar. Blend in vanilla and peach juice. Add the flour, baking powder and mix well.
  3. In a small bowl, beat egg whites on high speed until stiff peaks form; fold into batter. Spoon into skillet.
  4. Bake at 375° for 30-35 minutes or until a toothpick inserted near the center comes out clean. Let stand for 10 minutes before inverting onto serving plate.
